Visit participating local shops and restaurants to get free pre-packaged Christmas Cookies on Saturday, Dec. 18 from 10 a.m. to 2 p.m. The Town will provide Christmas Cookie tins to the first 100 participants that register. A delicious crunchy cookie full of flavor, thanks to The Old Mill's special speculaas spice mix. Speculaas cookies were traditionally baked for the feast of St. Nicholas in Holland, but luckily are nowadays easily available year-round! Not to be confused with the Belgian speculoos, which are not as spiced, these speculaas cookies are full of spice and flavor! These crunchy windmill shaped cookies are a treat for the whole family.


I made these sugar cookies for my friends birthday! I modified the recipe by kneading with a 1/4-1/2 cup of gluten free all purpose flour and then chilling the dough overnight in the fridge. I rolled and used cookie cutters like any gluten dough. Overall, the dough held its shaped when baked and made soft, flakey cookies. Lovely addition to the party! Every ate them and I received many compliments.

Next, place your baking sheet (with cut out cookies on it) back in the fridge for another hour or even overnight. The cold air will help the cookies keep their beautiful shape so they look at good as they taste. The longer your refrigerate them before baking, the better! (See Notes below to prevent cookies from spreading and losing their shape.)


I have tested this recipe dozens of times and the cookies work just fine each time. However, some people have noted that the cookies spread. It always bothers me to hear this, especially since this recipe has been so well tested and loved by my family.


Do not Melt Butter. The butter should be soft but still solid at room temperature. If you use melted butter or hot butter, your cookies will spread. If you need to quickly bring your butter to room temperature, cut it into cubes and let it sit on your counter for 30 minutes. You can also grate the butter with a cheese grater and it will come to room temperature faster. Avoid using your microwave.


Do Not Overmix Dough. Mix the dough only enough until all the ingredients are incorporated. When you cream the butter and sugar together, only do it until the ingredients are well combined, about 30 seconds, no more. Whipping the cookies too long will add more air into the dough and cause it to collapse when baking. Remember, there is no gluten to develop here either, so no need to overmix.

It was very soft so I placed it in the refrigerator for several hours overnight, It was very hard so I let it sit on parchment paper for 15 minutes or so, then i rolled it out. To prevent dough sticking to the rolling pin, I tried powdered sugar and then flour (I prefer flour but sugar works great, too) Be careful when cutting out the cookies as the dough can be fragile. After baking and cooling and frosting, the cookies are delicious and I am happy!Yes, wheat flour for those who are not celiac is MUCH easier to bake with, but the 1 to 1 flour makes a delicious cookie that does not taste GF. I will be using this recipe often.


Not sure I can help with the milk question. You can feel your dough to help it along as you need. When I roll it out I use parchment paper or powdered sugar to avoid adding more flour to the cookies. Good luck!


I must admit, I was afraid of how these would turn out on my first attempt and having to swap out real butter for Earth Balance. But these cookies did not disappoint in taste or texture! My son and I loved them. Since there was a lot of batter for just the two of us, I wonder if the dough can be frozen?

For more than a century, the two Minneapolis companies were spirited rivals, first in milling and selling flour but more broadly in promoting and encouraging Americans to bake. To foster that, both companies employed a dazzling array of marketing and educational efforts.


Partly, the answer is that every culture includes food in its holidays, and in old Europe, cakes and cookies have long been part of the Christmas celebration. Immigrants brought those traditions to America.


For the huge baby boom generation, it helped forge a powerful association linking Betty Crocker with baking cookies, childhood memories, Christmas tradition, mom in the kitchen, licking the spoon and sweet aromas.

Mix the butter and sugar until it gets nice and fluffy. Believe it or not, this mixture acts a leavener. The paste hold onto air bubbles which gives the cookies a nice light texture when baked. Once the mixture looks light, about two minutes of mixing on medium-high speed, stop the mixer and add the egg.


Line a baking sheet with parchment paper and press the cookies right onto the baking sheet. If the cookie dough sticks to the paper, hold the paper down with your hand as you press the dough onto the sheet.


Repeat with remaining dough. (If the dough won't release from the press during the second batch of cookies, stir in a little water, about 1-3 teaspoons. Sometimes the dough stiffens between batches. Adding water solves the problem.) Allow baking sheet to cool between batches or the cookies will spread.


This was a great recipe. I followed the recipe exactly. (I may use a little less salt next time) The cookies came out of the press just like the gluten full cookies I use to make. I rolled some of the extra dough into balls and flattened with the bottom of a glass that had been dipped in colorful sugar. They came out great too!Thank you for this recipe! 2ff7e9595c
